Apple Crisp – Single Serve, in a Cast Iron Tiny Skillet
1 small apple, Granny Smith or something similar, cored and cut up into chunks
½ tsp lemon juice
1 to 3 tsp brown sugar
½ tsp cinnamon
tiny pinch of salt
Topping:
2 tbsp rolled oats (not quick oats)
1 tbsp flour
1 tbsp brown sugar
pinch of cinnamon
1 tbsp butter
**optional: your choice of nuts or seeds – walnuts are nice, your choice as to how much to mix in.
Preheat oven to 375 F (190 C)
Mix the apple and the next 4 ingredients in a small bowl.
Grease the small skillet, and pour in the apple mixture.
Mix the topping and sprinkle it over the apple mixture.
Bake for 15 to 20 minutes until the fruit is soft and the top has lightly browned.
Serve with a dollop of ice cream. Also good with a drizzle of caramel sauce.
This can be scaled up to serve more people (or if you don’t have the smaller fry pans).
If you don’t have a cast iron pan, for other types turn down the oven temperature by 25 degrees F and cook around 10 or 15 minutes longer.
This recipe is well-timed for apple harvests, depending on your location….it’s still early for northern climates, but it’s perfect for the autumn celebrations of Mabon or Samhain
